  4. Spread the cauliflower and onion mixture onto a baking sheet in a single layer.
  5. Roast in the preheated oven for 20 minutes, or until the cauliflower is tender and slightly browned.
  6. While the cauliflower is roasting, warm the corn tortillas in a dry skillet over medium heat.
  7. Mash the avocado with a fork and squeeze lime juice over it.
  8. To assemble the tacos, spread the mashed avocado onto each tortilla. Top with the roasted cauliflower and onion mixture. Garnish with fresh cilantro.
