Baked Okara Mini Donuts
Okara is a byproduct of soy milk production and is often used as a nutritious ingredient in various recipes.

Preheat the oven to 350°F (175°C).

In a mixing bowl, combine the okara, all-purpose flour, baking powder, salt, and sugar.

Add the vegetable oil, almond milk, and vanilla extract to the dry ingredients. Mix well until a smooth batter forms.

Grease a mini donut pan with oil or cooking spray.

Spoon the batter into the donut pan, filling each cavity about 3/4 full.

Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and let the donuts cool in the pan for 5 minutes.

Transfer the donuts to a wire rack to cool completely.

Once cooled, dust the donuts with powdered sugar.
