Preheat the oven to 375°F (190°C).

Drain the hearts of palm and slice them into 1/2-inch thick rounds.

In a bowl, mix together olive oil, minced garlic, lemon juice, parsley, salt, and black pepper.

Add the sliced hearts of palm to the bowl and toss to coat them in the marinade.

Arrange the hearts of palm in a single layer on a baking sheet.

Bake for 15-20 minutes, or until the hearts of palm are golden brown.
