Preheat the oven to 450°F (230°C).

Prick the eggplants with a fork and place them on a baking sheet. Roast in the preheated oven for 30 minutes, or until the skin is charred and the flesh is soft.

Remove the eggplants from the oven and let them cool slightly. Peel off the skin and discard.

In a food processor, combine the roasted eggplant, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth.

Transfer the baba ganoush to a serving bowl and garnish with chopped parsley.
