Preheat the oven to 375°F (190°C).

Trim the artichokes by removing the tough outer leaves and cutting off the top third. Cut them in half lengthwise and remove the fuzzy choke.

Heat olive oil in a large ovenproof skillet over medium heat. Add the garlic cloves and cook until fragrant.

Add the artichokes to the skillet, cut side down, and cook until browned, about 5 minutes.

Squeeze the juice of the lemon over the artichokes and add the thyme sprigs. Season with salt and black pepper.

Pour in the vegetable stock and bring to a simmer.

Transfer the skillet to the preheated oven and roast for 30-35 minutes, or until the artichokes are tender.

Remove from the oven and let rest for 10 minutes before serving.

Serve the pot-roasted artichokes as a side dish or as an appetizer with crusty bread.
