  4. Add the artichokes to the skillet, cut side down, and cook until browned, about 5 minutes.
  5. Squeeze the juice of the lemon over the artichokes and add the thyme sprigs. Season with salt and black pepper.
  6. Pour in the vegetable stock and bring to a simmer.
