Romanian Zacusca

Preheat the oven to 400°F (200°C).

Place the eggplant and red bell peppers on a baking sheet and roast in the oven for 30 minutes, or until the skin is charred.

Remove the roasted vegetables from the oven and let them cool. Peel off the skin and discard the seeds.

In a large pan, heat the sunflower oil over medium heat. Add the onions and cook until translucent.

Add the tomatoes to the pan and cook for another 5 minutes.

Add the roasted eggplant and red bell peppers to the pan and mash them with a fork or potato masher.

Season with salt, ground black pepper, paprika, and sugar. Cook for another 20-30 minutes, stirring occasionally.

Remove from heat and let it cool before serving.
