Rinse the quinoa under cold water and set aside.

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until fragrant.

Add the sliced mushrooms, diced potato, carrot, and celery. Cook for about 5 minutes, stirring occasionally.

Add the dried thyme, bay leaf, and vegetable broth. Bring to a boil.

Reduce heat to low and add the rinsed quinoa. Simmer for about 15 minutes or until the quinoa is cooked and the vegetables are tender.

Stir in the coconut milk, salt, black pepper, fresh parsley, and lemon juice. Cook for an additional 5 minutes.

Remove the bay leaf and serve the creamy mushroom quinoa chowder hot. Garnish with additional fresh parsley if desired.
