  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, almond flour, pumpkin puree, apple sauce, maple syrup, coconut oil, ground cinnamon, ground nutmeg, baking powder, vanilla extract, dried cranberries, and chopped walnuts. Mix well.
  3. Scoop the dough onto the prepared baking sheet, using about 2 tablespoons of dough per cookie. Flatten each cookie slightly with the back of a spoon.
  4. Bake for 12-15 minutes, or until the edges are golden brown.
  5. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.
