Preheat the oven to 325°F (160°C).

In a large bowl, combine the rolled oats, almonds, cashews, dried cranberries, dried apricots, raisins, honey, coconut oil, vanilla extract, cinnamon, and salt. Mix well to coat everything evenly.

Spread the mixture onto a baking sheet in an even layer.

Bake for 25 minutes, stirring halfway through, until the granola is golden brown.

Remove from the oven and let it cool completely.

Once cooled, break the granola into small clusters.

Store in an airtight container for up to 2 weeks.
