Mincemeat originally contained meat, but this vegetarian version uses textured vegetable protein as a meat substitute.

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are softened.
  3. Add textured vegetable protein and cook for 5 minutes.
  4. Stir in tomato paste, vegetable broth, soy sauce, Worcestershire sauce, brown sugar, thyme, rosemary, cinnamon, nutmeg, salt, and black pepper. Simmer for 10 minutes.
  5. Roll out the pie crust and place it in a pie dish. Pour the mincemeat mixture into the crust.
  6. Cover the pie with another sheet of pie crust. Seal the edges and cut slits on the top crust.
  7. Brush the top crust with beaten egg.
  8. Bake for 30 minutes or until the crust is golden brown.
  9. Let the pie rest for 10 minutes before serving.
