  1. Preheat the oven to 400°F (200°C). Cut the acorn squash in half, remove the seeds, and brush the flesh with olive oil. Place the squash halves on a baking sheet, cut side down, and roast for 40 minutes or until tender.
  2. While the squash is roasting, heat a large pot over medium heat. Add the remaining olive oil, onion, and garlic. Sauté until the onion is translucent.
  3. Scoop out the roasted acorn squash flesh and add it to the pot. Stir in the vegetable broth, alder wood chips, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Remove the pot from heat and let it cool slightly. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Return the soup to the pot and stir in the coconut milk. Simmer for an additional 5 minutes.
  6. Serve the soup hot, garnished with fresh parsley.
