Ingredients
Instructions
-
Preheat the oven to 400°F (200°C). Cut the acorn squash in half, remove the seeds, and brush the flesh with olive oil. Place the squash halves on a baking sheet, cut side down, and roast for 40 minutes or until tender.
-
While the squash is roasting, heat a large pot over medium heat. Add the remaining olive oil, onion, and garlic. Sauté until the onion is translucent.
-
Scoop out the roasted acorn squash flesh and add it to the pot. Stir in the vegetable broth, alder wood chips, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
-
Remove the pot from heat and let it cool slightly. Use an immersion blender or transfer the soup to a blender to puree until smooth.
-
Return the soup to the pot and stir in the coconut milk. Simmer for an additional 5 minutes.
-
Serve the soup hot, garnished with fresh parsley.
