African Peanut Soup
Peanut soup is a popular dish in many African countries, and each region has its own variation. It is often enjoyed with a side of rice or bread.

In a large pot, sauté the onion, garlic, and ginger until fragrant.

Add the red bell pepper, carrots, and sweet potato. Cook for 5 minutes.

Stir in the peanut butter, vegetable broth, crushed tomatoes, cayenne pepper, cumin, coriander, salt, and black pepper.

Bring the soup to a boil, then reduce heat and simmer for 20 minutes.

Remove from heat and let the soup cool slightly. Blend until smooth using an immersion blender or regular blender.

Return the soup to the pot and reheat if necessary. Stir in lime juice.

Serve the soup hot, garnished with fresh cilantro.
