15 Minute Vegetarian Chili
Chili con carne, or simply chili, is a spicy stew containing chili peppers, meat, and often tomatoes and beans. However, vegetarian chili has become a popular alternative, using plant-based ingredients to create a flavorful and hearty dish.

Heat olive oil in a large pot over medium heat.

Add chopped onion, minced garlic, diced bell pepper, and sliced carrot. Cook for 5 minutes until vegetables are tender.

Add canned diced tomatoes, drained kidney beans, drained black beans, and drained corn. Stir in chili powder, ground cumin, salt, and black pepper.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.

Remove from heat and stir in fresh cilantro and lime juice.
