10-Bean Soup
Bean soups have been enjoyed around the world for centuries and are a great source of plant-based protein and fiber.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 120 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Rinse the 10-bean mix under cold water and drain.

In a large pot, heat olive oil over medium heat. Add diced onion, carrots, celery, and minced garlic. Sauté for 5 minutes until vegetables are slightly softened.

Add the 10-bean mix, vegetable broth, tomato paste, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer uncovered for 5 hours or until beans are tender, stirring occasionally.

Remove from heat and let the soup rest for 10 minutes.

Sprinkle with chopped parsley and serve hot.
