Sweet potato and butternut squash soup
Sweet potatoes and butternut squash are both excellent sources of vitamin A, which is important for maintaining healthy vision.

Peel and chop the sweet potatoes, butternut squash, onion, and garlic cloves.

Heat olive oil in a large pot over medium heat.

Add the chopped onion and garlic cloves to the pot and sauté until fragrant.

Add the sweet potatoes and butternut squash to the pot and cook for 5 minutes.

Add the vegetable broth, cumin, cinnamon, salt, and black pepper to the pot.

Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes until the sweet potatoes and butternut squash are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the coconut milk.
