  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Cook until vegetables are softened, about 5 minutes.
  2. Add black-eyed peas, corn, vegetable stock, dried thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25 minutes.
  3. Remove bay leaf and discard. Use a blender or immersion blender to puree about half of the soup until smooth. Return to the pot and stir well.
  4. Cook for an additional 5 minutes to heat through. Serve hot.
