Preheat the oven to 180°C.

Grate the carrots and drain the excess juice from the grated carrots.

In a large bowl, combine the grated carrots, chopped pineapple, all-purpose flour, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the eggs, vegetable oil, honey, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Fold in the chopped walnuts.

Grease a muffin tin or line it with muffin liners.

Fill each muffin cup with the batter.

Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
