Preheat the oven to 400°F (200°C).

Trim and peel the beets, then cut them into 1/2-inch (1 cm) cubes.

In a bowl, toss the beets with olive oil, balsamic vinegar, minced garlic, salt, and black pepper.

Spread the beets on a baking sheet and roast for 30-35 minutes, or until tender.

While the beets are roasting, slice the baguette into 1/2-inch (1 cm) thick slices.

Toast the baguette slices in a toaster or oven until lightly golden.

Once the beets are done, remove them from the oven and let them cool slightly.

To assemble, place a roasted beet cube on each toasted baguette slice.

Top with a fresh basil leaf and drizzle with a little balsamic vinegar.
