  1. In a mixing bowl, combine vital wheat gluten, nutritional yeast, garlic powder, paprika, and fennel seeds.
  2. In a separate bowl, mix together liquid smoke, tomato paste, soy sauce, olive oil, water, and red food coloring.
  3. Add the wet mixture to the dry mixture and knead it into a dough.
  4. Divide the dough into four equal portions and shape each portion into a log.
  5. Wrap each log tightly in aluminum foil.
  6. Preheat the oven to 350°F (175°C) and bake the seitan logs for 25 minutes.
  7. Remove the logs from the oven and let them rest for 5 minutes.
  8. Unwrap the logs and slice them into thin slices.
