In a large pot, bring vegetable broth to a boil.

Add tomatoes, tofu, enoki mushrooms, bok choy, bean sprouts, green onions, garlic, and ginger to the pot.

Season with soy sauce, sesame oil, salt, and white pepper.

Cover the pot and simmer for 30 minutes.

In a small bowl, mix cornstarch with water to make a slurry.

Stir the slurry into the hot pot to thicken the broth.

Let the hot pot rest for 10 minutes before serving.
