Preheat the oven to 400°F (200°C).

Peel and cut the carrots into evenly sized matchsticks.

In a large bowl, toss the carrots with olive oil, cumin, paprika, garlic powder, and salt until well coated.

Spread the carrots in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized.

Remove from the oven and let rest for 5 minutes.

Garnish with fresh cilantro before serving.
