Chickpeas and Rice

Add the spices (cumin powder, coriander powder, turmeric powder, salt, and black pepper) to the pot and cook for a minute.

Add the chopped tomatoes and cook until they soften.

Drain the cooked chickpeas and add them to the pot along with the vegetable stock.

Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.

Meanwhile, cook the basmati rice according to package instructions.

Once the chickpeas are cooked and the flavors have melded together, remove from heat.
