Rinse the lentils and rice separately.

In a large pot, heat the olive oil over medium heat.

Add the onion and cook until softened.

Add the cumin, coriander, and salt, and cook for another minute.

Add the lentils, rice, and water to the pot.

Bring to a boil, then reduce heat to low and cover.

Simmer for 30-40 minutes, or until the lentils and rice are tender and the water is absorbed.

Remove from heat and let rest for 5 minutes.

Fluff with a fork before serving.
