Cut the cauliflower into florets and peel and slice the carrots.

Boil the cauliflower and carrots in a large pot of salted water until tender, about 10-12 minutes.

Drain the cauliflower and carrots and transfer them to a large mixing bowl.

In a small pan, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
