Soak the red kidney beans overnight in water.

Drain the beans and rinse them.

In a large pot, heat olive oil over medium heat.

Add chopped onion, minced garlic, and diced bell pepper. Sauté until softened.

Add tomato sauce, bay leaves, salt, black pepper, and paprika. Stir well.

Add the soaked beans and enough water to cover them.

Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.

Remove the bay leaves and garnish with fresh cilantro.

Let it rest for 10 minutes before serving.
