Green Lantern
The name ‘Green Lantern’ is inspired by the vibrant green color of the dish, which is reminiscent of the superhero’s iconic green lantern.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Cook the rice according to package instructions.

In a large pan, heat the sesame oil over medium heat. Add the garlic and ginger and sauté for 1-2 minutes.

Add the bell pepper, broccoli, green beans, and snap peas to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

Push the vegetables to one side of the pan and add the tofu. Cook for 3-4 minutes until heated through.

In a small bowl, mix together the soy sauce and 2 tablespoons of water. Pour the mixture over the vegetables and tofu.

Stir everything together and cook for an additional 1-2 minutes.

Serve the stir-fried vegetables and tofu over the cooked rice.
