Rinse the quinoa under cold water and cook according to package instructions.

In a large skillet, heat olive oil over medium heat. Add diced red onion and sauté until translucent.

Add diced red bell pepper, corn kernels, and cumin. Sauté for another 3-4 minutes.

Drain and rinse the black beans. Add them to the skillet and cook for 2-3 minutes.

In a large bowl, combine cooked quinoa, sautéed vegetables, chopped cilantro, lime juice, salt, and black pepper. Mix well.

Let the flavors blend by allowing the dish to rest for 5 minutes.

Serve the quinoa and black bean bliss with sliced avocado on top.
