Preheat the oven to 350°F (175°C). Grease a loaf pan.

In a large bowl, mix together the pumpkin puree, vegetable oil, maple syrup, flaxseed meal, and water.

In a separate bowl, whisk together the all-purpose flour, baking powder, cinnamon, nutmeg, cayenne pepper, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Pour the batter into the greased loaf pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
