  1. In a pan, heat vegetable oil and sauté garlic and ginger.
  2. Add bamboo shoots, carrots, cabbage, bean sprouts, and mushrooms. Stir-fry for 2-3 minutes.
  3. Season with soy sauce, sesame oil, salt, and pepper. Cook for another 2 minutes.
  4. Take a spring roll wrapper and place a spoonful of the vegetable filling in the center.
  5. Fold the sides of the wrapper towards the center, then roll tightly.
  6. Repeat for the remaining wrappers.
  7. Heat vegetable oil in a deep pan and fry the spring rolls until golden brown.
  8. Serve hot with dipping sauce of your choice.
