Rinse the rice under cold water.

In a saucepan, combine the rice, orange juice, vegetable broth, cinnamon stick, orange zest, and salt.

Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.

Remove the cinnamon stick and fluff the rice with a fork.

In a separate pan, heat olive oil over medium heat.

Add almonds and cook until lightly toasted.

Add dried cranberries and cook for another minute.
