Heat oil in a large pot over medium heat. Add onion and garlic, and cook until softened.

Add curry powder and cook for 1 minute, stirring constantly.

Add butternut squash, white beans, vegetable broth, coconut milk, lime juice, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the squash is tender.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.

Serve hot, garnished with fresh cilantro.
