In a large pot, bring the vegetable broth to a boil.

Add the corn kernels, daikon radish, carrots, ginger, and garlic to the pot. Simmer for 15 minutes or until the vegetables are tender.

Using an immersion blender, blend the soup until smooth.

Stir in the coconut milk, soy sauce, lime juice, salt, and black pepper.

Simmer for an additional 5 minutes.
