Chilled Kale and Potato Soup
Kale is known as a superfood due to its high nutritional value. It is rich in vitamins A, C, and K, as well as calcium and antioxidants.

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add diced potatoes and vegetable stock to the pot. Bring to a boil and simmer until potatoes are tender.

Add kale leaves to the pot and cook for an additional 5 minutes.

Remove the pot from heat and let it cool for a few minutes.

Using a blender, puree the soup until smooth.

Stir in lemon juice, salt, and black pepper.

Place the soup in the refrigerator and let it chill for at least 30 minutes.

Serve the chilled soup in bowls, topped with a dollop of Greek yogurt and fresh dill.
