  1. Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add sliced zucchini and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Remove from heat and let it cool slightly.
  5. Transfer the mixture to a blender or use an immersion blender to puree until smooth.
  6. Return the soup to the pot and reheat over low heat. Season with salt and black pepper.
  7. Serve hot, garnished with fresh basil leaves and a dollop of sour cream.
