Heat olive oil in a pot over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add sliced zucchini and cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.

Remove from heat and let it cool slightly.

Transfer the mixture to a blender or use an immersion blender to puree until smooth.

Return the soup to the pot and reheat over low heat. Season with salt and black pepper.
