Cut the zucchini, bell peppers, and red onion into thick slices.

In a large bowl, combine the sliced vegetables, cherry tomatoes, olive oil, lemon juice, minced garlic, salt, and black pepper. Toss to coat the vegetables evenly.

Place the vegetables on the preheated grill and cook for about 5 minutes on each side, or until they are tender and slightly charred.

Remove the grilled vegetables from the grill and let them rest for 5 minutes.
