Rinse the quinoa under cold water.

In a large pot, heat the olive oil over medium heat.

Add the onion and garlic, and cook until softened.

Add the carrots, celery, zucchini, and bell pepper. Cook for 5 minutes.

Add the quinoa, vegetable broth, diced tomatoes, mixed vegetables, parsley, thyme, salt, and black pepper. Bring to a boil.

Reduce heat and simmer for 20 minutes, or until the quinoa and vegetables are tender.

Stir in the lemon juice.
