Place a cheesecloth or muslin cloth over a colander.

Pour the yogurt into the cheesecloth.

Gather the edges of the cloth and tie them together.

Hang the cheesecloth with the yogurt over the colander and place a bowl underneath to catch the whey.

Let the yogurt strain for at least 12 hours, or up to 24 hours for a thicker consistency.

Once strained, remove the yogurt cheese from the cloth and transfer it to a container.

Season with salt to taste.

Refrigerate until ready to serve.
