Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a large bowl, combine the gluten-free flour blend, gluten-free oats, baking powder, baking soda, and salt.

In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), almond milk, and apple cider vinegar.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Transfer the dough onto the prepared baking sheet and shape it into a round loaf.

Using a sharp knife, score a cross on top of the dough.
