Yellow squash is an excellent source of vitamins A and C, as well as dietary fiber.

  1. Preheat the oven to 400°F (200°C).
  2. Slice the yellow squash, tomatoes, and onions.
  3. Place the squash, tomatoes, onions, and minced garlic in a mixing bowl.
  4. Drizzle with olive oil and sprinkle with salt and black pepper. Toss to coat evenly.
  5. Tear sheets of aluminum foil large enough to hold a portion of the vegetables.
  6. Divide the vegetable mixture among the foil sheets and place a few basil leaves on top of each.
  7. Fold the foil sheets over the vegetables and crimp the edges to form packets.
  8. Place the packets on a baking sheet and bake for 20 minutes.
  9. Remove from the oven and let rest for 5 minutes.
  10. Carefully open the packets and serve.
