Yellow Squash and Tofu Stir Fry
Yellow squash is a good source of vitamin C and manganese.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 30 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Press the tofu to remove excess water, then cut into cubes.

In a small bowl, whisk together soy sauce, sesame oil, minced garlic, and grated ginger.

Heat vegetable oil in a large skillet over medium-high heat.

Add the tofu cubes and stir-fry until golden brown on all sides.

Remove the tofu from the skillet and set aside.

In the same skillet, add sliced yellow squash, red bell pepper, and chopped green onion.

Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Return the tofu to the skillet and pour the soy sauce mixture over the vegetables and tofu.

Stir-fry for an additional 2 minutes.

In a small bowl, mix cornstarch with water until smooth.

Add the cornstarch mixture to the skillet and stir until the sauce thickens.

Season with salt and black pepper.

Remove from heat and let it rest for 5 minutes.
