Soak the yellow eyed beans in water overnight.

Drain and rinse the soaked beans.

Heat oil in a pan and sauté onions, garlic, and ginger until golden brown.

Add tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook until the tomatoes are soft.

Add the soaked beans and water. Cover and simmer for 30 minutes or until the beans are tender.

Stir in garam masala powder and cook for another 5 minutes.

Garnish with fresh cilantro leaves and lemon juice.

Serve hot with rice or bread.
