Winter Red Sauce over Spaghetti Squash
Spaghetti squash is named for its unique texture, which resembles spaghetti strands when cooked.
This is vegan and gluten free recipe. Dish can be prepared in 70 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 400°F (200°C).

Cut the spaghetti squash in half lengthwise and scoop out the seeds.

Brush the cut sides of the squash with olive oil and place them cut-side down on a baking sheet.

Roast the squash in the preheated oven for 40 minutes or until tender.

While the squash is roasting, heat the remaining olive oil in a large skillet over medium heat.

Add the onion, garlic, and red bell pepper to the skillet and sauté until softened.

Stir in the crushed tomatoes, dried basil, dried oregano, salt, and black pepper.

Simmer the sauce for 15-20 minutes.

Once the squash is done, use a fork to scrape out the strands and transfer them to a serving plate.

Top the spaghetti squash with the red sauce.

Garnish with fresh basil leaves and vegan parmesan cheese if desired.
