Cal’s Romesco
Romesco sauce originated in the Catalonia region of Spain and is typically made with roasted red peppers, almonds, and bread. It is a versatile sauce that adds a rich and smoky flavor to various dishes.

Preheat the oven to 200°C (400°F).

Place the red bell peppers, tomatoes, and garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt.

Roast in the oven for 20 minutes or until the skin of the peppers and tomatoes is charred.

Remove from the oven and let cool slightly. Peel and deseed the peppers.

In a blender or food processor, combine the roasted peppers, tomatoes, almonds, bread crumbs, garlic cloves, red wine vinegar, smoked paprika, salt, and black pepper.

Blend until smooth and creamy.

Taste and adjust the seasoning if needed.

Let the romesco sauce rest for 5 minutes before serving.
