  2. Place the red bell peppers, tomatoes, and garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt.
  3. Roast in the oven for 20 minutes or until the skin of the peppers and tomatoes is charred.
  4. Remove from the oven and let cool slightly. Peel and deseed the peppers.
  5. In a blender or food processor, combine the roasted peppers, tomatoes, almonds, bread crumbs, garlic cloves, red wine vinegar, smoked paprika, salt, and black pepper.
  6. Blend until smooth and creamy.
  7. Taste and adjust the seasoning if needed.
  8. Let the romesco sauce rest for 5 minutes before serving.
  9. Serve as a sauce with grilled vegetables, roasted meats, or as a dip with crusty bread.
