Soak the dried shiitake mushrooms in hot water for 20 minutes. Drain and slice.

Peel the winter melon, remove the seeds, and cut it into bite-sized pieces.

Peel and slice the carrots.

In a large pot, bring the vegetable broth to a boil.

Add the winter melon, carrots, and sliced shiitake mushrooms to the pot.

Crush the garlic cloves and mince the ginger. Add them to the pot.

Season with soy sauce, salt, and white pepper powder.

Simmer the soup for 20-25 minutes until the vegetables are tender.

Garnish with chopped green onions and drizzle with sesame oil.
