Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a mixing bowl, cream together the dairy-free spread, granulated sugar, and vanilla extract until light and fluffy.

In a separate bowl, whisk together the gluten-free flour blend, baking powder, and salt.

Gradually add the dry ingredients to the creamed mixture, mixing well after each addition.

Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.

Insert a lollipop stick into each cookie ball, pressing it halfway through.

Bake for 10-12 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

In a small bowl, mix the icing sugar with a few drops of water until you achieve a thick glaze consistency.

If desired, divide the glaze into separate bowls and add food coloring to each bowl.

Dip each cookie pop into the glaze, allowing any excess to drip off.

Place the cookie pops back on the wire rack to set.
