  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the dairy-free spread, granulated sugar, and vanilla extract until light and fluffy.
  3. In a separate bowl, whisk together the gluten-free flour blend, baking powder, and salt.
  4. Gradually add the dry ingredients to the creamed mixture, mixing well after each addition.
  5. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  6. Insert a lollipop stick into each cookie ball, pressing it halfway through.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  9. In a small bowl, mix the icing sugar with a few drops of water until you achieve a thick glaze consistency.
