Wild Rice Stuffing with Pine Nuts
Wild rice is not actually rice, but a type of aquatic grass seed.

Cook the wild rice according to package instructions using vegetable broth.

In a large skillet, toast the pine nuts over medium heat until golden brown. Set aside.

In the same skillet, heat olive oil and sauté the onion and celery until softened.

Add the cooked wild rice, toasted pine nuts, dried cranberries, parsley, thyme, salt, and black pepper to the skillet. Stir well to combine.

Cook for an additional 5 minutes, allowing the flavors to meld together.

Remove from heat and let the stuffing rest for 10 minutes before serving.
