Preheat the oven to 400°F (200°C).

Cut the eggplant in half lengthwise and score the flesh in a crisscross pattern. Place the eggplant halves on a baking sheet, cut side up.

Drizzle the eggplant with olive oil and sprinkle with salt. Roast in the oven for 30-35 minutes, or until the flesh is soft and golden.

Remove the eggplant from the oven and let it cool slightly. Scoop out the flesh and transfer it to a food processor.

Add the white beans, tahini, garlic, lemon juice, cumin, salt, and paprika to the food processor.

Blend until smooth and creamy.

Taste and adjust the seasoning if needed.

Transfer the hummus to a serving dish and drizzle with olive oil.

Garnish with fresh parsley.

Serve with pita bread, crackers, or fresh vegetables.
