  3. Drizzle the eggplant with olive oil and sprinkle with salt. Roast in the oven for 30-35 minutes, or until the flesh is soft and golden.
  4. Remove the eggplant from the oven and let it cool slightly. Scoop out the flesh and transfer it to a food processor.
