Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat, cover, and simmer for 15 minutes or until the liquid is absorbed.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, and fresh parsley.

In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine.

Let the salad rest for 5 minutes to allow the flavors to meld. Serve warm.
