Cook the lentils according to package instructions. Drain and set aside.

In a large bowl, combine the cooked lentils, diced red onion, grated carrot, sliced cucumber, halved cherry tomatoes, crumbled feta cheese, and chopped fresh parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss to combine.
