Preheat the oven to 350°F (175°C). Grease and line a Swiss roll pan with parchment paper.

In a bowl, whisk together cake flour, cornstarch, baking powder, and salt.

In a separate bowl, whisk together granulated sugar, soy milk, vegetable oil, vanilla extract, sakura extract, and red food coloring.

Gradually add the dry ingredients to the wet ingredients, whisking until smooth.

Pour the batter into the prepared pan and spread it evenly.

Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 5 minutes.

Dust a clean kitchen towel with powdered sugar.

Invert the cake onto the towel and gently peel off the parchment paper.

Starting from one end, roll the cake tightly with the towel.

Let the rolled cake cool completely on a wire rack.

In the meantime, prepare the filling of your choice.

Carefully unroll the cooled cake and spread the filling evenly.

Roll the cake back up, using the towel to help.

Place the rolled cake on a serving platter and refrigerate for at least 1 hour.
